I’m not a huge fan of loading up on carbs every day, I’m not carb-phobic or anything like that, I just prefer to have a reefed meal once every 5-7 days. I stay leaner and I’m more focused throughout the work week. One of my favorite re-feeds is a home-made chocolate cake – I love chocolate and I love to cook so it makes sense.

For anyone that loves a rich chocolate cake with only ‘clean’ ingredients then give this a try – I promise you will not be disappointed!!

Ultimate Chocolate Cake

Ingredients
  • 6 room temperature eggs
  • ½ cup honey
  • ½ cup raw cacao powder
  • 1 tsp vanilla essence
  • 3/4 cup organic, unsalted butter

Directions
  • Heat butter in a saucepan and add in honey, stirring until combined.
  • Add remaining ingredients into a food process and quickly add in the butter and honey mixture and combine immediately on high for 3-4 minutes. The mixture will be very thin and have small bubbles.
  • Pour into a cake tin coated in coconut oil and bake for 40 minutes.
  • Once cool, top with icing and enjoy!

Ultimate Chocolate Cake Icing

Ingredients
1 large avocado, very soft
½ cup honey
½ cup raw cacao powder
1 tsp vanilla essence

Directions

Add all ingredients to a food processor and combine on high until smooth (around 30-60 seconds).

Everyone remembers the pancake breakfasts they used to have on the weekend as a kid; some of us still have them as adults!
I don't eat foods with gluten or ingredient lists as long as my arm, so here is a healthier alternative that's still easy and cheap to make with all of your favourite flavours! 

Ingredients
  • 2 bananas 
  • 3 eggs 
  • 1/4 cup coconut milk 
  • 2 tbsp coconut flour 
  • 1 tsp ground cinnamon 
  • Dash of real vanilla extract 
  • 5g unsalted organic butter 
  • 1 tbsp coconut cream, chilled 

Directions 
  1. In a mixing bowl, mash up the bananas so that they are smooth. 
  2. In a smaller bowl, crack open the eggs and whisk them, then place them in the bowl with the bananas. 
  3. Add in the coconut milk, cinnamon and vanilla extract and whisk until combined. 
  4. Heat a pan on medium heat and add in the butter. Once melted, place spoonfuls of the pancake mixture and cook on one side until small bubbles form, then flip and cook for a further minute. 
  5. Repeat the process until all of the batter has been used. 
  6. I like to have mine with a tablespoon of coconut cream, but feel free to mix it up and use some berries, baked apples or some more bananas on top!
