Rest In Peace Charles and Thank You For Everything

This morning I have been shocked and shattered by the news of my greatest mentor Charles R Poliquin passing.

Charles is the person who has had the biggest impact on my life. I would not be who I am today if I had not met him. Everything in my life today relates back to Charles in some way. Every book I own, every program I write, everything I do all can be connected in some way. He passed on his knowledge but more importantly he gave me confidence and helped me believe in myself to be more than I was and he showed the way.

There will not be another Charles. His legacy will continue.

I am so grateful for this great man and my thoughts are with his family and closest friends.

Almond Cookies

These cookies were whipped up in 15 minutes and hit all the right spots!

They are gluten free, Paleo, vegan, vegetarian and can fit your macros if you are going keto.

Apart from being delicious and ridiculously easy, they are a perfect base recipe for any type of cookies you desire! You can add chocolate chips, nut butter, dried fruit, etc. and create your own masterpiece full of all the good stuff and none of the nasties. 

  • 2 cups of almond meal
  • 1/4 cup coconut oil 
  • Pinch of pink salt 

  1. Preheat oven to 180 degrees and line a baking tray with parchment paper.
  2. Add all ingredients to a mixing bowl and stir until a dough forms. 
  3. Roll them into small balls, roughly 1 tsp, then flatten lightly with your hands.
  4. Cook in the over for 8-10 minutes or until golden.
They will last around 7 days in an airtight container or a tad bit longer in the fridge.
